Nestled in a serene, wooded spot in Sainte-Marthe-sur-le-Lac, maple trees with 10,000 syrup taps surround the rustic Auberge des Gallant. The restaurant’s seasonal dishes currently include a rack of pork ($49), served with apple in a ginger sauce and crunchy tempura scallops ($49) that play nice with tender sautéed fennel in a citrus reduction. A cozy wooden A-frame houses the Maple Pavilion, which opens March through April to offer an array of maple products. Maple leaf-shaped bottles ($5–$10 for 250 millilitres) add helpful visuals to ease the awkward moment when syrup asks where it came from.
Lodging at Auberge des Gallant comes in three styles with varying décor and amenities, many of which boast wood-burning fireplaces: country rooms radiate rustic charm, luxurious rooms are outfitted with regal king-sized beds, and honeymoon rooms decorated with Victorian brocades and canopied beds maintain a sweetness parallelled only by puppies dipped in honey (regular rates run from $195 to $235 per night for a single).
Lodgers can also languish in the spa to exfoliate away dearly departed cells and lingering bits of pancake during the 80-minute maple biscuit body treatment ($125) or to evict tension to a life of suspension bridge support with a 50-minute Swedish massage ($75).
