Chef Surinder Singh’s first teacher was his mother, who taught him to cook with a medley of local ingredients in Punjab, Northern India. His roots are represented in Rasam’s menu of Indian classics. The beef kababs are marinated in traditional spices and the salmon fillets are drenched in a curried mustard sauce.
