On Sunday mornings, gospel singers file onto Fat Boys Southern Smokehouse’s stage as the scent of hickory smoke and tangy barbecue sauce wafts through the dining room. When they’re not challenging diners with their all-you-can-eat gospel brunch or all-you-can-eat ribs on Monday nights, the cooks churn out a daily menu of beef brisket, pulled pork, and Memphis ribs. Pit chef Ron Plummer is happy to conduct tours of his walk-in smoker, where centre-cut pork ribs marinate for three hours in an 11-spice dry rub and are massaged every 15 minutes by a team of magical elves. To complement their succulent slabs of meat, the cooks plate 16 southern sides such as homemade creamed corn and potato salad, which was deemed “extraordinary” by the Ottawa Citizen.
